It’s fundraising by way of cake making and selling at work tomorrow and as last year’s star baker, with a tried and tested Nigel Slater recipe, I felt I had to up my game this year. I found this on the BBC Good Food website and it ticked all my boxes. However, I was unable to find Dulce de Leche at short notice so I subbed it for Reeces peanut butter chocolate spread and have my fingers crossed for tomorrow’s tastings. Cake didn’t rise well and I suspect my SR flour is a bit too old so when I make it again I will get new flour!

Crunchy chicken cutlets
I’ve been eyeing this one, from ‘Simply Nigella’ for a while. Whilst I love eating this kind of thing I’ve never had a go at cooking it before. In the ratio of big flavour set against ease of cooking this scores high - there was nothing complicated to do and it was delicious. A keeper.
